OVERAGED EXPRESSIONS
When Time Becomes an Ingredient
No influence shapes rum more profoundly than time. As years pass in oak, tropical heat steadily concentrates the spirit while softening its edges. Water and alcohol evaporate, flavours become richer, and the interaction between wood and spirit creates layers of dried fruit, spice, leather, and mature oak that simply cannot be rushed.
This flight brings together three exceptional examples of extended maturation from across the Caribbean. Although each reflects a different rum-making tradition, all demonstrate how patience, careful cask management, and time can transform great rum into something truly extraordinary.
Bambarra Heritage
Sourced from the Southern Caribbean | Overaged Blend | 36% ABV
This blend contains four barrels of mature rum more than 15 years old, aged entirely in Turks & Caicos. A small addition of youthful rum restores aromatic lift and energy, balancing venerable oak character with vibrant freshness.
Nose: Marzipan, candied orange peel, dried apricot, rose, hazelnut, leather, spices, graphite
Palate: Roundness and elegance, brown sugar, tingling baking spices, silky structure
Finish: Walnut, leather, mild spices, noble rancio character
Built for reflection, celebration, or pairing with a fine Caribbean cigar.
Appleton Estate 21 Year
Jamaica | Jamaican Pot & Column Blend | 43% ABV
While it is almost impossible to keep Rum this long in the tropics without losing it all to evaporation, Appleton knows the wonders that long aging does to the liveliness of their high Ester Rums.
Nose: Sweet orange, dried banana, leather, vanilla.
Palate: Medium-full, velvety, savory bitterness and oak spice.
Finish: Dried banana, bitter herbs, lingering mouth-watering bitter oak.
An elegant expression that proves Jamaican rum can be every bit as refined as it is distinctive.
El Dorado 21 Year
Guyana | Demerara Rum | 40% ABV
Drawn from some of Diamond Distillers' oldest historic stills, this rare expression reveals the elegance and complexity that emerge only through extended tropical maturation.
Nose: Dried date, walnut, leather and mature oak.
Palate: Sweet and richly textured with nutty character, dried fruit and refined barrel influence.
Finish: Leather, graphite, tobacco and a lingering Cognac-like richness.
A magnificent Demerara rum where age has added extraordinary depth without sacrificing balance.
How to Enjoy this Flight
Begin with Bambarra Heritage, where exceptional age is expressed through elegance, balance, and refined oak rather than sheer intensity. Finish with El Dorado 21 Year, the oldest and most richly developed expression of the flight, where decades of maturation reveal extraordinary layers of dried fruit, leather, polished oak, and lasting complexity. As you taste, notice how three very different rum traditions arrive at the same destination through patience, time, and masterful aging.
