WHITE / RAW CANE EXPERIENCE

The Spirit Before the Barrel

Many drinkers assume white rum is simply aged rum before it meets a barrel. In reality, some of the world's most expressive spirits never rely on wood at all. Without years of oak to soften or reshape them, these rums reveal the character of their raw ingredients and the decisions made during fermentation and distillation with remarkable clarity.

This flight explores three very different approaches to unaged and lightly aged rum. From a refined charcoal-filtered expression to vibrant cane juice rum and Haiti's deeply traditional Clairin, each offers a unique perspective on what rum can become before extended maturation enters the picture.

Bambarra Silver

Sourced from the Southern Caribbean | Aged Molasses Silver | 40% ABV

A fresh, silky white rum aged briefly in oak before charcoal filtration removes the colour while preserving much of the character developed during maturation.

Nose: Lime peel, cane juice, molasses, and vanilla.
Palate: Silky and crisp with fresh citrus, light sweetness, and gentle oak influence.
Finish: Clean and refreshing with lingering citrus zest and soft vanilla.

A polished introduction that bridges the gap between traditional white rum and lightly matured expressions.

Barbancourt Haitian Proof

Haiti | French / Cane Juice | 55% ABV

One of the great contributions of Master Blender Jean-Marc Ewald during his tenure at Barbancourt was the reimagining of their white Rum. Still made 100% from their traditional blue cane variety “Madame Mueuse”, the batches are selected to blend at a now much higher strength of 55% ABV.

Nose: Funky, grassy fresh cane, bright citrus, olive, licorice and herbs.
Palate: Rich grassy cane with briny mineral notes, lively heat, and pepper.
Finish: Long, vibrant, and peppery with lingering cane sweetness and mineral character.

A powerful reminder that freshness and intensity can rival even the oldest aged rums.

Clairin Communal

Haiti | Clairin Blend | 43% ABV

Produced from Clairins sourced from four Haitian communes, this traditional spirit offers an approachable introduction to one of the Caribbean's oldest and most distinctive rum traditions.

Nose: Sugar cane, lemongrass, green olive and fresh herbal notes.
Palate: Salty, mineral, and oily with subtle smokiness and vibrant cane character.
Finish: Olive brine, spun sugar, and lingering mineral notes.

A fascinating expression of terroir and traditional craftsmanship unlike almost any other rum in the world.

How to Enjoy this Flight

Begin with Bambarra Silver, whose clean profile eases the palate into the world of minimally aged rum. Continue with Barbancourt Haitian Proof, where fresh cane juice and higher proof deliver remarkable intensity and complexity. Finish with Clairin Communal, whose rustic character, mineral depth, and unmistakable sense of place provide a fitting conclusion. As you taste, focus less on colour and more on production. This flight demonstrates that fermentation, raw materials, and distillation often shape a rum's personality just as profoundly as years spent in oak.
